Purple Hull Peas

This is a southern style purple hull peas recipe that is tender and full of flavor. Fresh peas were used in this recipe but dried peas can be used as well after soaking first. This side dish can be served over rice and pairs well with many main dishes such as ham, pork chops, or even chicken fried steaks. For sides, okra goes well along with cornbread to dip on the flavorful broth.

Ingredients

  • 1 1/2 fresh purple hull peas with or without snaps
  • 4 slices bacon diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 smoked ham hock
  • 4 cups chicken broth
  • 1/2 lb whole okra optional
  • Salt and pepper to taste

Instructions

  • In a large pot, cook bacon until crisp.
  • Add in onion to pot with the bacon and cook until soft over medium heat, 3-5 minutes.
  • Add in garlic and sauté for one additional minute.
  • Add remaining ingredients (except okra if using), stir to combine.
  • Let come to a simmer then cover with lid.
  • Cook over medium low heat until desired doneness, 20-30 minutes.
  • If using okra, add in during the last 10 minutes of cooking time.
