Red Velvet Sweet Potato Pie

Ingredients

  • 1 pre-made pie crust or homemade if preferred
  • - 1 cup mashed sweet potatoes
  • - 1 cup granulated sugar
  • - 1/2 cup unsalted butter melted
  • - 2 large eggs
  • - 1 teaspoon vanilla extract
  • - 1/4 cup buttermilk
  • - 2 tablespoons cocoa powder
  • - 1 teaspoon red food coloring
  • - 1/2 teaspoon cinnamon
  • - 1/4 teaspoon salt
  • - 4 oz cream cheese softened
  • - 1/4 cup granulated sugar
  • - 1 egg
  • - 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine mashed sweet potatoes, sugar, melted butter, eggs, vanilla extract, and buttermilk. Mix until smooth.
  • In a separate bowl, whisk together cocoa powder, red food coloring, cinnamon, and salt. Add this mixture to the sweet potato mixture and mix until well combined.
  • Pour the red velvet sweet potato filling into the pie crust, spreading it evenly.
  • In another bowl, beat together the cream cheese, sugar, egg, and vanilla extract until smooth.
  • Drop spoonfuls of the cream cheese mixture onto the red velvet sweet potato filling. Use a knife to swirl the cream cheese into the filling to create a marbled effect.
  • Bake in the preheated oven for 45-50 minutes or until the center is set.
  • Allow the pie to cool completely before slicing.
